Where do I find my conversations?

The Chats tab in the bar at the bottom lists every companion you have talked to, most recent first, with a dot beside any whose last message you have not read yet. Your chosen companions sit at the top. Search filters the list by companion name, and opening a chat picks up exactly where you left it.
